Beet Salad

Salad Ingredients

  • 4-6 small red beets. We used our boro beets.

  • 1 tsp canola oil

  • 6 cups of fresh salad greens. We used arugula!

  • ¼ toasted pepitas, nuts or roasted chickpeas. We used pepitas

  • 2 red or green spring onions

  • 4 oz goat or feta. We used feta

  • 2 tbsp dill

  • 2 cups cooked whole grains (optional)

Dressing Ingredients

  • 1/4 cup canola oil

  • 2 tbsp red wine vinegar

  • 1 tbs maple syrup

  • 1 tsp Dijon mustard

  • ½ tsp salt

  • 1/8 tsp pepper
