1 cup finely chopped onion
1 cup finely chopped green bell pepper
1 cup apple cider vinegar
1 cup sugar
1 teaspoon mustard seeds
1 teaspoon celery seeds

1 teaspoon turmeric (optional, for color)
Instructions:
Prepare the Beets: Cook fresh beets until tender, then peel and dice them into small pieces. If using canned beets, ensure they are well-drained and diced.
Combine Ingredients: In a large saucepan, mix the diced beets, onion, and green bell pepper. Stir in the apple cider vinegar, sugar, mustard seeds, celery seeds, salt, black pepper, and turmeric if desired.
Cook the Relish: Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for about 20-30 minutes. Stir occasionally to prevent sticking. The relish should thicken slightly.
Jar the Relish: Remove the saucepan from heat. While it's still hot, carefully ladle the relish into sterilized jars, leaving about ½ inch of headspace. Wipe the rims of the jars with a clean cloth before sealing.
